I’ve only sampled a small slice of this as it is for Christmas Day, but it has knockout flavour. It will go down a treat. Cooked it sous vide with a few aromatics for 16 hours at 63 degrees and then glazed it and blasted it in the air fryer to caramelise the glaze. Absolutely delicious. I will order this again for sure. This ain’t no ordinary ham.

Delivery was as promised. We have only tried one pigeon which I roasted. It tasted fine but was tough. My husband declared it was an olympic bird!
