Service and produce is fantastic
I dry this 3kg beauty uncovered in the fridge for 48hrs. I then remove the ribs for another meal. Rub in plenty of fine sea salt and black pepper front and back and roll and tie with string. 30 mins on El Scorchio and then down to 140°c for around 1hr 30. You will not be disappointed, the crackling is so light and crisp even after a day or so in the fridge. 100% the best oinker I’ve ever had.
