Cooked low & slow (2 hours at 150C) then pressed and cooled overnight, then cooked hot in square portions (230C for 20 minutes) to complete the process. Simply seasoned with salt and pepper. Juices from the slow roast combined with red wine and reduced to an intense jus. Soft, buttery meat, perfect crackling, and the flavour was simply immense.

Well sliced so that it is even, allowing fast even flash cooking. The product was still moist. I will certainly buy again.
Clean, mild nut taste with a medium firm consistent texture. The rind is even with a pleasant chewable texture. It dries out quickly in a fridge.
Buttery texture that can be somewhat clinging at room temperature. At fridge temperature it looses its, otherwise well defined flavour which is its strong point. A perfect cooking cheese.
This joint is the classic for Vitelli Tonnato and although not the most preferred joint for slicing into escalopes it often is. The meat was presented well with veal fat hand tied in place ready for roasting. So much better that the lazy net stocking used in commercial cutting rooms. The surface was dry, temperature on arrival about 9°C which is a remarkable feat. This joint has a natural low fat content so aligns itself to slow moist cooking even when roasting. The meat colour is a pale rose. Impressive.
The look of this cut is fantastic; but it is sitting in the freezer right now. I plan to cook it for my birthday dinner.
