Description

Taken from the ankle and calf region of the pig, our ham hocks are incredibly meaty, full of flavour and excellent value for money. Leaving the skin on helps to keep them tender while cooking.

Weight: 650g-1kg

Serves: Up to 2 people

--

The Butcher: A very versatile and cheap cut, the hock is unfamiliar to a lot of people but will soon become a favourite.

In The Kitchen: Cooked on a low temperature over a long period, the hock will produce tender meat that is traditionally used in ham and pea soup. The leftover meat also makes a delicious ham sandwich.

The secret to Swedish Yellow Pea SoupReviewed by Marika.woods on 17 Jan 2025

The quality of the Ham Hock makes this simple food delicious! Ham hock is boiled with carrots onions and bay leaf producing wonderful stock. Swedish Yellow Peas are boiled in this stock and the fabulous meat falls off the ham hock bone. A shake of thyme and you have a gastro treat - filling tasty and nutritious. Can be deep frozen. Always buy from Kimbers Farm as quality is assured and the price is good.

Good productReviewed by Graham on 28 Nov 2024

I buy these for very slow sous-vide cooking over 48 hours. Then carefully fillet and freeze the meat for subsequent use in casseroles and frittatas

Gloucester Old Spot Pork

“Once you try Gloucestershire Old Spots pork you'll turn your back on the tasteless dried up intensively reared pork forever.”Derek Cooper on the BBC Food Programme

Our Gloucester Old Spot piglets are selected from a small number of small holders who keep them in a free range system, allowing them to exhibit natural behaviours such as rooting for food and wallowing in the summer.

We purchase the piglets at 8 -10 weeks, where they are moved to deep straw bedded traditional pigstys with an outside pen. The pigs are fed on the best balanced proprietary food and a spot of milk.

Using an English slow growing breed of pig, in particular the Gloucester Old Spot, the pork is sweet with just the right amount of fat to assist flavour and cooking - and the crackling is something else!
