Ever since visiting Rome in 2015 and experiencing proper Roman Spaghetti Carbonara, I've been trying to source guanciali. Thanks to extra time on my hands during lockdown, I came across Kimbers' website. I would recommend them as a supplier of superb quality produce in a heartbeat - oh yes, and the carbonara was to die for! The goods were well packed and my delivery updates were bang on. I had only enjoyed goat in a Korma curry in Singapore previously so thought a roast rack would be worth a try. Wow! What a gourmet experience. Slow cooked in a low oven and then well rested it was meltingly tender and full of a delicious, juicy flavour. Cumberland sauce (fiddly but worth the effort) with crushed juniper berries to give it a pine scent was the perfect accoutrement. At £25 well worth every last penny. Thank you Kimbers I shall be reordering soon.
