Bought for a work colleague for his leaving present, fabulous gift full of such delicious treats.
Loved the ham hocks. And the service / delivery was spot on. But… I did order “green” knuckles and the ones sent were dry cured. Made the dish a bit saltier than ideal. Still, these aren’t always easy to find and we did enjoy them nonetheless.
The right ratio of fat to meat, perfect smoking and rind that crisps well. What more do you need?
