Lovely piece of meat. As it's long and thin, don't over cook it. 20 minutes at 220c, 40 minutes at 170c and resting for I hour did it lovely and pink.
We have been very pleased with the orders we have had so far, the duck we had for xmas was excellent, the joints are well butchered and not hacked like some supermarket joints, well pleased will be back for more!
