Do not be put off by the fat content in your piece. Cut up and slowly rendered the most delicious crispy bits swimming in a truly flavourful fat not to be discarded will make any dish especially carbonara worthy of a Michelin star .
Unlike supermarket bacon this is entirely flavoursome and meaty. The rind crisps up beautifully because its not full of water and cured properly.
Fabulous meat. My son marinaded it over night and cooked it on BBQ to slice and eat in tortilla wraps. Amazing.

Quite why British rose veal shin should be so difficult to find is a bit of a mystery to me: it is so much tastier than the milk-fed, Dutch alternative. This product from Kimbers' Farm Shop looks the real thing, and I look forward to serving it to my guests at the weekend.
Goat meat is readily available from city-based, Halal butchers, but I could not bring myself to buy from such vendors. I have therefore, in the past, placed orders with a variety of "niche" producers - all excellent, albeit very expensive. Today I took my first delivery of Kimbers' diced goat, and quickly turned part of it into a tagine with apricots and pistachios: superb! If this turns out to be a regular stock item, I shall certainly become a regular customer. Pricing was reasonable, and overnight chilled delivery worked a treat. Well done, Kimbers!
I have three favourite meats that are not easy to come by in my part of the country, despite having plenty of excellent farm shops and independent butchers, and probably a larger population of sheep than of people! The first rarity is mutton, far tastier than younger lamb, or even hoggett: "spring lamb" is aggressively marketed and undisputedly tender, but its subtle flavour is a reflection of the few weeks that the poor animal has been permitted to live. Give me two- (or preferably five-) year old mutton any day! Next is British rose veal shin for Osso Buco: Dutch, milk-fed veal is fairly widely available, but why is the tastier British rose veal shin so hard to come by? Are male calves of dairy cattle still being treated as a waste by-product, rather than as a resource to be celebrated and enjoyed? Finally, there's goat: I could not contemplate buying from dubious, city-based, Halal butchers, so where to turn to for this flavoursome, lean meat? Male kid goats are surely as much a by-product of the dairy industry as the male calves of dairy cattle, so why is their meat so hard to find? Fortunately, I have been introduced to Kimbers' Farm Shop, where these hard-to-find products are stocked, at least at the present time. Overnight delivery in chilled and insulated packaging worked a treat. I have yet to enjoy much of my initial order, but I can say that tonight's goat tagine with apricots and pistachios, prepared shortly after the courier had departed, was superb! My weekend visitors are in for an Osso Buco treat....! Oh, and the cheeses were interesting, too: artisan cheese-making is very much alive and well in my neck of the woods, but it's always good to find something new. I shall definitely be placing another order in the not-too-distant future.
