Bit pricey, but so hard to get and a real treat of you like the best kidneys available, plus can either use the suet to enhance the kidneys, or make good pastry/dumplings. With extra's one would just do two people
This was a very good piece of lamb. Cooked for 4 hours on the smoker until just pink. The meat fell away and was very tasty

After a 24 hour wet marinate, a minute sear in the vortex flames either side and 10 minutes off the flame each side to create a perfect 53 before resting. The final result was an excellent medium rare piece of meat
