I dry this 3kg beauty uncovered in the fridge for 48hrs. I then remove the ribs for another meal. Rub in plenty of fine sea salt and black pepper front and back and roll and tie with string. 30 mins on El Scorchio and then down to 140°c for around 1hr 30. You will not be disappointed, the crackling is so light and crisp even after a day or so in the fridge. 100% the best oinker I’ve ever had.

Bought two of these to use in a pea and ham soup for 12. The meat was great and gave the soup great flavour. Arrived on time, will but from Kimbers again.

Superb meat - melts in the mouth and loads of wonderful dripping. You get what you pay for and this was worth every penny.
