This guanciale was a little too heavily spiced for my liking. The last cut we had was just about perfect, but this was overdone in the curing.
Not only was this tomahawk thick enough to properly grill to medium rare while achieving a beautiful crust on the outside. The balance of flesh to fat made the perfect level of juicy without being too heavy. The 1kg size fed four healthy would admirably! I am ordering this cut again.
