The cuts were a little thicker than I was expecting, but easy to flatten a little with a steak hammer. fried and finished in the oven and cooked with a lemon sauce in the Milanese style. Best veal for a very long time
A hard cheese with the texture of cheddar. Tastes quite mild to start with, but has a pleasant and stronger after taste. Goes well with digestive biscuits
Made the best game pie we've had for years. Marinated in red wine overnight, then cooked very slowly in the wine and some veg stock, thickened and turned into a pie dish with a flaky pastry crust. Very good quality mix with plenty of venison, a reasonable amount of rabbit and game birds. In a word... delicious
Ordered online expecting a nice, well aged Guanciale. This was more like pancetta, speckled with fennel. Good flavour but not as good as I was expecting.

What’s not to like about this cheese? Smooth, creamy, not too strong. Perfect with Peters Yard sour dough crackers
The consistency of the cheese is smooth, but there is an earthiness to the flavour that I don’t enjoy. I’ve had Keens cheese before, years ago, and I remember this flavour from then. There’s nothing wrong with the cheese, just doesn’t suit my palate.
Just right for me in its combination of saltiness, creaminess and blueness.

Love fennel and salami combination, as with the Chorizo would prefer thicker slice. Have asked whether they are both available to order as whole salami/sausage?
Amazing layering of flavours, would prefer slightly thicker slices as vacuum packaging ensured they stuck to the board.
Looks good, not used yet, but have recipes to try, need to buy the most suitable pasta for this, not easy when the supermarket shelves can still be empty!
