Long and slow cooking, 4 or 5 hours at 130c completely covered with water in a large pan, will see the meat fall off the bone. One pot cooking with with potatoes and large chunks of carrot and onion doesn't get any easier or any better. The next day just add dumplings and smoked paprika to the left over stock for a fabulous goulash soup - wonderful.
Slow cooked for 6 hours at 120c (sealed with foil in a large roasting pan half filled with water, onions, carrots and rosemary) the meat becomes beautifully tender with a wonderful flavour. Great as a Sunday roast but even better the day after as a hot pot under thin and crispy slices of sweet potato or with aubergines and basmati rice and your choice of curry paste (Massaman is our current favorite), The stock you have already made from the slow cooking, and any left over meat, makes great risotto or, even easier and quicker, add some veg and pasta for a fabulous minestone. This joint really is the gift that goes on giving, we loved it.

My husband finds it hard to live without these and they are becoming difficult to get with the Covid restrictions so I was extremely pleased to find them at Kimbers. The biscuits are what he feels goes best with cheese and being a Dorset Knob himself, he feels it is a perfect pairing!

Fabulous.Rubbed skin with olive oil,salt and black pepper.Cooked at 180c for 2hrs 15 minus.Wacked temp up to 200 for 25 minus.Best crackling ever.Pork scored to perfection.Pandemic crackling and the meat was tender and so tasty
