We roasted this with juniper, rosemary and red wine on a trivet of onion and carrot. The flavour was wonderful and made our Boxing Day. The meat is lean, tender and cooks beautifully in a short time. Very lean end to end. We always cook to at least 74 degrees now we have a thermometer. This ensures we don't over cook and dry out the meat. Eats well cold.
