Really creamy wholesome taste. Freezes well and same quality when defrosted. Well done.
Cooked low & slow (2 hours at 150C) then pressed and cooled overnight, then cooked hot in square portions (230C for 20 minutes) to complete the process. Simply seasoned with salt and pepper. Juices from the slow roast combined with red wine and reduced to an intense jus. Soft, buttery meat, perfect crackling, and the flavour was simply immense.
