It looked a little darker than I’m used to but was really good with onions sage and lemon.
I made what I call oxtail bucco. It’s osso bucco with oxtail instead of veal. Enough for 2 meals for 2 and some left over. Delicious.

Delivered just as promised and a wonderful cut. This was a 'lockdown' treat, and we are only two, so we cut it is half and froze one part (looking forward to it!) and roasted the other. All ovens vary, forget timing the cooking, a thermometer that probes the inner part of the meat and can left in whilst in the oven and read through the window is essential. 50C for rare - it was perfect! Cheaper than 4 slices from supermarket. And much tastier.
Extremely tasty. I did my usual and made a trivet of shallots, studded with garlic. Squeeze of lemon and good rapeseed. High heat for 30 minutes then slow for 2 more hours. Tasty juicy meat. Still good cold next day. The gravy was so good.
I was looking for this product to follow a pasta recipe. Therefore found Kimbers. Its a very tasty version of pancetta probably more chewy.
Just reviewing on what I can see. Huge portions, looked really good Will be cooked in the French confit style and without doubt will be far better than using supermarket duck legs
