Melts in mouth
The veal arrived before 9am and was still beautifully cold. It did not shrink at all when I roasted it so I got an extra meal out of it, and it tasted delicious.
Nicely salted and still firm. Long slow cooking made it a fantastic summer sandwiches and cold buffet dish
Used poached, in a classic white chicken stew with sweetbreads served in a cream sauce in a large Vol au Vent.
It is still maturing for use as Vitello Tonnata after three extra weeks of maturation in the cold

I found Kimbers' via a Google search for Guanciale in the UK and placed an order online. The Guanciale itself is superb and is so much better than what you can find in a supermarket and the customer service is excellent. Highly recommended.
Followed a French recipe for Sweetbreads a la Castillane with a mousse of bananas and apples. Bit of a fiddle but well worth it in the end because the result was sensational. These sweetbreads were ultra fresh and top quality. No gristle or membrane. Properly, professionally prepared. Thank you Kimbers.
Great choice for a special family Sunday lunch. Slow roast, it was tender and full of flavour. I will definitely buy again. Highly recommended.
No bone on the chops
Nicely butchered and rolled, with a fat in the centre that kept the meat moist. Made a very delicious roast, only adding some herbs, black pepper and garlic and turning, it because it basted itself
I think I used the wrong recipe, and should have rinsed out the salt over 72 hours as I found later, the 3 hours wasn't enough, my mistake. 1 was considerably larger than the other, which was a surprise. I don't have a press, so I'm serving it hot dishes with lots of veg, to reduce the salt. I don't use added salt in my food, so other may not experience the same problem.
The courier left the box in the shed, and it was only by accident that I found it before DHL sent the message. Everything was still chilled, so not an issue. I wasn't happy with the substitution of the beef jerky with pork scratchings and would have preferred a refund as was provided for the tartare sauce.
I made up my usual bolognese sauce, but there was a lot of fat in this mince, so I will dry fry the second batch, it doesn't need any added fat, in my opinion.

The veal was lean and very flavoursome. Superb. Will definitely be buying again. I have never found veal as good as this before..
