Wish the crackling had been scored before sending out, so that when it was cooked the crackling would have been crispy and not chewy.
The perfect main ingredient for my home-cooked vitello parmigiano and saltimbocca. I have tried all kinds of less expensive pork and poultry escalopes for the creation of my favourite two Italian dishes but these veal escalopes beat the lot and are well worth the extra expense.

Delicious and tender. Made a Veiner Schnitzel. Used to buy them cold at railway stations in Germany in late 50’s early 60’s. So far have used chicken breasts. No longer , so good to have the veal escalopes.
