The Butcher: The fillet is arguably the most tender cut of beef. The muscle is non-weight-bearing, meaning there is less connective tissue, which tends to cause toughness in beef. Its flavour composition pairs especially well with butter, mushrooms, pepper, shallots and bacon. This is because the cut has low levels of marbling, or fat, so these strong flavors complement it well and really bring out the beefy flavor.
In The Kitchen: The fillet is traditionally cooked on high heat to sear the outsides and then reduced to low heat to cook the insides, but is served rarer than most steaks. Bacon can be used to wrap around the fillet while cooking.

Excellent, I have bought individual fillets elsewhere but as I like mine medium sometimes with the thickness they are still raw in the middle but this way buying the whole fillet I cut them to my choice,happy days

We ordered this for a 50th B’say bbq and cooked it Jamie Oliver style- it was a truly stunning piece of meat. A bit scary to cook in one piece as had never attempted anything like this but it was worth it and very special as well as being comparatively great value when we compared locally.

How quickly will my order arrive?
Our aim is to dispatch all orders placed before 1pm on the same day (Tuesday to Friday), this is dependent on whether the items ordered are in stock. Any orders placed after that time will be dispatched on the next available working day.
We will send you a notification email when your order has been dispatched. The time your order takes to arrive will depend on the delivery option you choose.
While we always try our best to dispatch every order following the above guidelines, during extremely busy periods dispatch times may increase by up to one day.
What days will my order be delivered on?
Our couriers deliver between 07.00 and 18.00 Wednesday to Saturday.
Collect in person
You are able to collect your order from our premises by choosing the relevant option at the checkout. At this point delivery charges will be removed. Please choose your date of collection at the checkout.

Grass Fed, Free Range Aberdeen Angus Beef
Generations of farming knowledge and experience have resulted in Gold award winning beef.
Our Aberdeen Angus animals are grass fed on Somerset’s lush grassy pastures. They are free range from early spring into the autumn when the weather becomes inclement. During the winter animals are brought back to the homestead and housed in large, airy, light straw bedded barns.
Animals are hand selected by our Traditional Master Butcher, for quality and conformation. Using the expertise of small local slaughterhouses dramatically reduces stress and enhances carcass quality. 21 day naturally dry aged on the bone beef, produces marbled, extra tender and beautifully flavoured meat.
