Traditionally used in pasties, this beef skirt can be marinated to cook quickly or slowly for shreds of delicious flavour. Although classified as a steak, it is rarely used as such.
Serves: Up to 3 people
The Butcher: Skirt steak is a cut of beef steak from the plate. It is long, flat, and prized for its flavour rather than tenderness, although 24 hours of marination will tenderise the meat and it can then be quickly cooked.
In The Kitchen: Because of it’s suitability for quick frying, skirt steak is perfect for quick frying in Chinese-style dishes. It also makes for a delicious steak sandwich.

Grass Fed, Free Range Aberdeen Angus Beef
Generations of farming knowledge and experience have resulted in Gold award winning beef.
Our Aberdeen Angus animals are grass fed on Somerset’s lush grassy pastures. They are free range from early spring into the autumn when the weather becomes inclement. During the winter animals are brought back to the homestead and housed in large, airy, light straw bedded barns.
Animals are hand selected by our Traditional Master Butcher, for quality and conformation. Using the expertise of small local slaughterhouses dramatically reduces stress and enhances carcass quality. 21 day naturally dry aged on the bone beef, produces marbled, extra tender and beautifully flavoured meat.
