This is the beef I remember, dark, tasty and the fat comes out and roasts the best potatoes and parsnips ever. Not those pink, spongy, overly trimmed things that come out of supermarkets.

The real thing, besides Kimbers' writing the name osso buco correctly (few do it) the meat itself is very good, just as we love it where I come from.

I slow cooked this as barbecoa beef. Seared it, 9 hours on slow with beef stock garlic, coriander, onion powder, smoked paprika & cumin. Shredded it and had it in wraps with chimichurri. Absolute delight. Really quality piece of meat. Packed with flavour.
It’s a bit small but nicely but nicely trimmed.
Reasonable size animal so a decent amount of meat. It may be low on flavour because of the animal age. Hardly an Ox but not a calf
