We roasted this with juniper, rosemary and red wine on a trivet of onion and carrot. The flavour was wonderful and made our Boxing Day. The meat is lean, tender and cooks beautifully in a short time. Look no further if you want a wonderful cut of highly flavoured meat to make a so special roast dinner!
