We roasted this with juniper, rosemary and red wine on a trivet of onion and carrot. The flavour was wonderful and made our Boxing Day. The meat is lean, tender and cooks beautifully in a short time. Very lean end to end. We always cook to at least 74 degrees now we have a thermometer. This ensures we don't over cook and dry out the meat. Eats well cold.
Beautiful, delicious duck. It made 3 meals for two. No waste, all the skin got eaten.

We ordered a Rib of beef to have as Christmas dinner this year , my sons were supposed to be joining us but due to lock down . There was only three of us so we had the beef for Christmas dinner and it was awesome full of flavour and very tender , then in Boxing Day I casseroled it and the next day we had a beef curry so well worth the money .
