Every guinea is perfect, a lovely flavour and texture and makes the most wonderful stock from the carcass. I had roast Guinea and harissa spaghetti on Christmas day and Guineas noodle soup the next day using the stock....absolutely stunning. This mutton is wonderful, the meat is so tasty and tender and I love the fat, they are perfect braised or for a curry.

Calves liver was wonderful however delivery was not. I was advised of date and time of delivery however driver just left it on my doiestepndespite that I was in and ready to answer door. I have ring video so would have known, he just turned his massive van around on my drive and went I was not impressed with this. Maybe let your couriers know`

The taste was just like black pudding that I ate when I was young - absolutely delicious. The slices should be cut a little thicker as they easily broke up into pieces.
