This beef shin on the bone is suitable for slow braising to create a tender deep flavour. When slow cooked, the connective tissue breaks down to provide a tender meat.
Serves: Up to 2 people
The Butcher: While originally quite tough, due to being from an oft-worked muscle, slow cooking brings out the tenderness of this cut.
In The Kitchen: Perfect for creating the Italian meal Osso Bucco, cook with vegetables, white wine and stock for a hearty stew.

After a day planting spring bulbs, and too tired to care ... I threw a frozen beef shin in the pressure cooker pro with a chopped onion, garlic, one stock cube, two rough chunked potatoes, 1/4 bottle of wine and a splash of water...40 min later...we were swooning over bowls of soup....stew...? Whatever, it was amazing. We ate the lot! I did make garlic bread to serve with it...that was good too.
Stunning! Reviewed by Kimscastle808 on 05 Oct 2020

Grass Fed, Free Range Aberdeen Angus Beef
Generations of farming knowledge and experience have resulted in Gold award winning beef.
Our Aberdeen Angus animals are grass fed on Somerset’s lush grassy pastures. They are free range from early spring into the autumn when the weather becomes inclement. During the winter animals are brought back to the homestead and housed in large, airy, light straw bedded barns.
Animals are hand selected by our Traditional Master Butcher, for quality and conformation. Using the expertise of small local slaughterhouses dramatically reduces stress and enhances carcass quality. 21 day naturally dry aged on the bone beef, produces marbled, extra tender and beautifully flavoured meat.
