Roast the Gammon covered with tin foil at 160c. 30 mins before end of cooking time, remove tin foil, carefully peel off the skin leaving the fat. With a sharp knife make a cris cross pattern in the fat. Then stick read made mustard, honey, Demerara sugar across the fat. Then insert whole cloves in the junctions of each cris cross pattern on the gammon. Increase the oven temp to 210c and place the gammon uncovered back in the oven. Cook for up to the final 30 minutes removing every 10 mins to fully baste the gammon in the juices from the pan.

After a two and half hour Dr Pepper bath finished in the oven with a layer of English mustard and a layer of black treacle you are left with THE BEST gammon
Home smoked Christmas ham
Out in the snow smoking a big gammon joint on the BBQ, this is my Christmas tradition!
Cooked at 130 with offset coals for 6hours or until internal temp is above 67 degrees.
Smoked with Cherry and Hickory wood.
Remove skin and score the fat into diamonds.
Add a clove to each diamond. And cover with a mixture of brown sugar salt and pepper (to taste)
Glazed with a 50/50 mix of honey and butter melted together, with a cinnamon stick, cardamon pods and star anise added to the pot. Glaze every hour.
Another Scrumptious Gammon
Honey and Mustard Baked
Boil in cider with onion, gloves and pepper corns for 30 mins to 1hr depending on size
Remove rind and cover with honey and mustard mix, use cider to baste, bake in oven 150 deg for 45 mins to 1.5 hrs depending on size
Golden Wedding Gammon
Baked, smoked gammon - 4kg
Soak overnight. Cover with water and bring to boil. Add bay leaf and peppercorns to water. Simmer until cooked through. Remove skin, score fat. Make a paste with honey, Dijon mustard and brown sugar. Cover cooked ham with mixture and bake in moderate oven - about 160c until crispy and golden. Baste several times during cooking.
