Two ducks
Roasted well and rested for as long as they were cooked. Carved well.
Using an AGA, having pricked skin I placed both ducks upside down on roasting rack. Pisces them in roasting oven, lowest rung. Gave them 1 hour, took them out and placed them right side up in a clean second roasting rack. Returned ti ROven for another hour. Removed then toi rest whilst I used the duck fat ti roast winter veg plus potatoes. Made gravy with juices and veg stock. Carved the ducks into a warm dish prior to serving.

Part 1 of Canard à l’orange .. Roast ducks in oven 180 degrees for 3hs approx .. prick skin and remove excess fat regularly.

Roast Peking Duck
Easy to make restaurant style
Marinate cavity with 5 spice, wine, sugar and seasonings, seal neck and bottom by bamboo skewers. Then rinse duck over with boiling water, leave 1 day to dry the skin. Roast at 170 1.5 hour (turn upside down half way to brown all over). Serve with dips such as plum sauce or hoisin sauce .
