Hello Ruth, I spoke to you today at Bath Farmers' Market, and as promised, I'm emailing you about the beef.

I had a forerib of beef from you last week for a Sunday roast. The meat was beautiful - dark, soft and buttery from being hung properly, and delicious once roasted. There's no disguising anything with rare roast beef, because the quality of the food is the quality of the meat and yours is great. It is also no more expensive than the supermarket, while being superior in almost every aspect. That includes the important fact that I can talk to you about how the animal has lived, how it's been slaughtered and butchered and how best to cook with the resulting meat. Again, not something I can do with the producers who supply the supermarkets.

I really appreciate you being available at the market. I love to cook, and a big part of that for me is caring about the produce I buy. Particularly with meat, it matters to me that the animals have had good lives and been well treated. Clearly yours have. It matters to me that the farmer makes a decent living, and buying direct from you rather than through the supermarket clearly helps with that. It matters that I can use the whole of the animal, not just the select cuts. Without you, I'd have a hard time getting the trotters, veal knuckles, lamb breasts and other cuts which are all so valuable to cook with. Let alone the fact that you're pretty much the only supplier of mutton I can find.

I've seen enough and read enough and cooked enough that buying - for example - anonymous, intensively farmed Danish pork from the supermarket is no longer acceptable to me. I want to know where my meat comes from, and to buy it from someone who understands it and cares about it. That's better for my stomach and my conscience. Without you, and other farmers like you, I'd have a very hard time of it and life would be much the poorer. Thank you for doing what you do, and making such lovely stuff available.
